Her flight got into Pearson at 8 am and she was at my door by shortly after 9. Mimosas were promptly poured, glasses clinked and bacon hit the pan. Nothing too fancy for a quick bon voyage brunch - just a classic eggs and bacon brunch, girl friends and for a little something sweet I made the easiest cinnamon buns ever.
I normally to prefer completely made from scratch buns, dough and all, but when Friday night is date night and you're on a time crunch these guys will be a perfect treat to whip out of your back pocket.
For most of the ingredients I don't have measurements which is what makes these buns so easy. Use as much or as little as you like, depending on your taste!
What you need:
1 can of Pillsbury crescent rolls/dough
Little more than 1/2 cup of butter
1/4 cup of brown sugar
White sugar
Cinnamon
Maple syrup
Cream cheese
Vanilla
Icing sugar
1 pie plate
What you do:
Preheat your oven to 350C
If you have a glass or microwaveable pie plate, put your 1/2 cup of butter in it and melt it in the microwave. Or if you are using a tin plate, melt the butter in a bowl. Mix in your brown sugar until nicely combined (and pour into your pie plate.)
Unroll the crescent dough onto a cookie tray and squish the pre-made lines together to form one sheet of dough then smooth a pat of butter over it.
Sprinkle white sugar and cinnamon over the butter.
Drizzle maple syrup (preferably the real stuff!) over the sugar.
*Feel free to get creative at this point! Add nuts, raisins, dried fruit - whatever your taste buds desire!
Now start to roll the dough. Try to roll it nice and tight and squish the seam at the top together to make sure all the sugary goodness doesn't fall out.
Cut the roll into 8 slices and place into the butter and brown sugar mixture in the pie plate.
They don't look pretty now but just wait to see how they turn out!
While you are patiently waiting for your cinna buns you can get started on the icing.
In a small bowl mix together 1/2 cup of cream cheese, about 1/2 cup icing sugar and 2 tsp of vanilla. Mix until combined. Take a little sample and adjust to your taste.
If you wanted to make your buns extra maple-y - try adding a dollop or two of syrup.
Once you take your cinnamon buns out of the oven, please exercise more patience! Keep yourself busy while you let them cool or else your creamy and delicious frosting will melt right off.
When they have cooled slightly, liberally spread the frosting over the tops of the buns.
Now, unless you wish to put your patience to the ultimate test, serve and enjoy immediately!
After our cinnamon buns it was time to whisk S off to the airport. After checking in, we sat and talked boys for an hour as if we were back in our first year dorm room.
Too soon it was time for her to go to the other side - through security and onto her new chapter in NZ.
Tears were shed and multiple hugs exchanged.
