Going granola

I'm a firm believer in eating breakfast every morning. It's the most important meal of the day and all that.

Sometimes things get a little hectic and I rush out the door with nothing in my belly except last night's dinner.
But with a fresh batch of these nutty little guys I have no excuses! If I'm running behind (which I normally am...) I can grab a few bars and fly out the door!

Peanut Butter Granola Bars

What you need:
1 cup smooth peanut butter (I use Kraft)
1/2 cup brown sugar
1/2 cup corn syrup
1/3 cup room temperature butter
2 tsp vanilla

3 cups quick-cooking rolled oats
1/2 cup flaked coconut (sweetened or unsweetened - your call)
1/2 cup slivered almonds or nuts of your choice
1/2 cup of raisins or dried cranberries
1/3 cup ground flax, flax seeds or wheat germ
3/4 cup chocolate chips


What you do:

Cream the first five ingredients until you have a smooth consistency.



Stir the remaining ingredients into the creamed mixture until everything is coated and combined.



Pat into a greased pan.


Bake at 350 for roughly 20 minutes or until the top starts to golden.



Killing time and giving Lottie a little treat! I just reach for the peanut butter and she is there playing the little beggar.




Golden and delicious looking!
Be patient and make sure to let them cool before you cut into your desired pieces.


Enjoy right away or save for a breakfast/snack on-the-go!
